Thick Beef and Vegetable Soup
Nothing says winter and protein like a beef soup which makes it a seasonal favourite. By adding vegetables and a low-sodium broth, you can increase nutrients and protein.
This recipe has just 240 calories, but packs 20 grams of protein and despite being made with red meat, it has just 3 grams of fat.
Ingredients
- 500 g gravy beef diced

2 onion diced

2 carrot diced peeled

3 celery stalk diced

1 tsp salt

1 tsp sugar

450 g tomato puree

2 L water
-
2 beef stock cube

2 drops Tabasco optional

2 potato diced

1/2 cup shells pasta shapes small
Method

Place meat, onions, carrots, celery, salt, sugar, tomato puree, water and stock cubes in a large saucepan (plus Tabasco if using).

Bring to boil, then simmer, covered, for approximately 1 hour, until meat is tender.

Add potatoes and pasta, and cook for a further 10 minutes.
